Passionate Sardinian chef Simone Tondo took over the kitchen of Racines in 2017, returning to the same, elegant spot where he had worked alongside Sven Chartier during his early days in Paris. Taking inspiration from his grandmother’s recipes, Tondo has injected fresh life into the 2007-opened bistrot à vins with his trademark earthy, slow-cooked comfort food. Casting aside the cheffy flourishes more common in these parts, dishes such as homemade pasta with a tomato-sausage sauce let the flavours speak for themselves, while a deceptively simple-looking tiramisu reminds diners just how revelatory this dessert can be.
