If it feels like you’re stepping into a decades-old French pharmacy when you enter Classique in Paris, it’s because you are. Much of the design remains the same, down to the green cross signage outside, but the approach is more akin to a neighbourhood bistro, although with top-quality fare. Doors open early here for coffees – their own blend – and pastries, and they stay open late for champagne, natural wine and more. The cocktails, some of which are served with a matching bite of food, are inventive and interesting, blending unusual flavours together and incorporating a number of ingredients that are made in house. The Melocoton Highball, for example, is made with Bruxo Mezcal, Rinquinquin Liqueur, espelette pepper, a pilsner cordial, pandan and sparkling mate tea.
