The renowned French chef Guy Savoy, who Gordon Ramsay credits as his mentor, opened his first place in the City of Light in 1980, and has been at the Monnaie de Paris – the Paris Mint – since 2015. A meal here is like no other, drawing diners from around the world (the menu is translated into English, Korean, Japanese, Chinese and Russian). The restaurant spreads across six rooms, each with a handful of white-clothed tables. Ceilings are high, most with huge windows overlooking the Seine, and the walls, ceilings and doors have exquisite mouldings. Contemporary artworks and abstract plateware bring a light touch to the grandness. Savoy's focus on flavour has produced signature dishes such as artichoke soup with truffle and layered truffled-mushroom brioche; iced poached oysters; and red mullet 'swimming in the sea' with a courgette garnish. For most diners, it's once-in-a-lifetime haute cookery, though there is a Keep It Simple menu at lunchtimes. Though when Savoy says 'simple', it's still seven courses.
