Plénitude's Head Chef Arnaud Donckel's approach has more in common with an artist or a chemist than your classic chef. His fine French menu is based around a series of 'Absolutes' - alchemic creations such as Velours Number One, which combines bonito belly, grilled seafood consommé, Lambrusco and Chardonnay vinegar, chestnut honey and citron essence, but in a more traditionally gastronomic move, he also puts sauces centre-stage. This unique approach has been richly rewarded with the maximum Three Michelin Stars and can be explored with either a three-course set menu (with optional cheese course) or for the purest expression of Donckel's vision you can opt for the six-course 'Symphony' tasting menu. The restaurant can be found within the understated luxury of Paris' Cheval Blanc hotel, with the dining room itself offering a modern, light-filled dining room where the dishes can take centre stage.
