Basque chef Iñaki Aizpitarte has always ripped up the rulebook, not least at the laid-back, hip Paris institution Le Chateaubriand. Though he remains the owner of this 11th Arrondissement hotspot which opened in 2006, he spends much of his time at his other establishment, Le Petit Grill Basque, in Saint-Jean-de-Luz. But his maverick influence remains at the Parisian neo-bistro where the no-choice taster menu changes daily and is seasonally driven. The long-time kitchen team love a provocative flavour pairing (think steamed turbot with rhubarb and elderflowers or cherry ice cream with dried capers), while the wine list steers clear of French vineyards in favour of focusing on biodynamic and organic bins from far-flung corners of the world. Although the decor is classic 1930s Paris style, with its leather banquettes, wooden tables and tiled floors, when it comes to the food, expect the unexpected.
