Fabulous French dining at one of the city’s most sought-after addresses. The Hôtel de Crillon at the foot of the Champs-Élysées re-opened in 2017 after a four-year renovation. Tucked away inside is L’Écrin, a dining room of only 28 seats in muted metallics, marble and mirrors. Rosewood Hotels announced Boris Campanella as the new head chef in spring 2019. His menu is exquisitely executed haute French: poached foie gras, turbot in champagne sauce, Pyrenean lamb, veal chop.
