The name of Mory Sacko’s restaurant in Paris’ eastern suburbs nods to the geographically diverse destinations that inspire its young chef. MoSuke combines his name and that of Yasuka, an African slave who, legend has it, became the first Black samurai. French-born with Malian and Senegalese roots and a childhood passion for Manga comics, Sacko’s creative cooking weaves together African, Japanese,and French flavours in continent-spanning set menus. The result? An original and innovative prandial journey: pepper soup packs in mackerel and red mullet, a mafé beef and peanut stew is infused with miso, and a Madagascan chocolate pie comes clipped by a sharp wasabi ice cream.

Mosuko was the first French restaurant serving west and central African food to win a Michelin star. As a result, Sacko is one of the country’s most in demand modern chefs and is tasked with developing state banquets menus and meeting Emmanuel Macron. Reservations are, therefore, a challenge: tables are released two months before and tend to book out instantly.
