Pierre Gagnaire grew up in his family’s Michelin-star kitchen and his eponymous restaurant at the Hotel Balzac is a mature expression of his fine cooking. However, it retains the humour and playfulness Gagnaire is known – and loved – for while the descriptions of his dishes read like poetry. There’s a good value three-course lunch menu for €90 ($100) but prices climb steeply after this, with the top-flight evening menu at €310 ($340).
