Plénitude's head chef Arnaud Donckele's approach has more in common with an artist or a chemist than your classic chef. His fine French tasting menu zeroes in on sauces, creating alchemic creations such as plump langoustine in an air-light sabayon and sardine in but in a more traditionally gastronomic move, he also puts sauces centre-stage. This unique approach has been richly rewarded with the maximum three Michelin Stars and can be explored with either a three-course set menu (with optional cheese course) or for the purest expression of Donckele's vision you can opt for the six-course 'Symphony' tasting menu. The restaurant is within the understated luxury of Paris' Cheval Blanc hotel, where dishes take stage in a modern, light-filled dining room.
