French-Cambodian chef Tomy Gousset opened Tomy & Co in 2016, not far from the Eiffel Tower, and has since followed it up with the equally well-received Hugo & Co and Marso & Co. Gousset is known for his vibrant, bistro-style plates, typically loaded with organic vegetables from Essonne bolstered by produce from his kitchen garden – and the elegant black-and-green interior sees walls decorated with illustrations of veggies. Standout dishes include a black sea bream with gravadlax and beetroot, caper flowers and a honey-mustard sauce, and chicken with foie gras and a broccoli-maize puree.
