French and Japanese cuisine meet head on in this intimate restaurant a stone's throw from the Fountain of Mars in Paris' cultural heart. The result is a culinary revolution. Foie gras accompanies turnip daikon, mango and amaretto, Ibérico pork pluma marries mushroom eryngii and Roquefort mousse, caramel umeboshi and jam entwine in a ménage à trois made in heaven. Pertinence ('Relevance') is the brainchild of chefs Ryunosuke Naito and Kwen Liew, who trained in some of France's most renowned kitchens before opening their own place in 2017.
