Who said concept dining was dead? Nestled in the trendy 11e district, Vaisseau isn’t for everyone and nor is it trying to be. A polarising dining room – dark, minimalist and theatrical – plays centre stage for a blind tasting menu of 17 courses that flows from the kitchen, nestled at one side of the restaurant under a shimmering extractor hood. Chef Adrien Cachot aims to wow and disorient with dishes that surprise at every turn; a sudden explosion of flavour here, an unexpected texture there; a complete culinary transformation that has you second-guessing what it is you’re eating. This is a place where you come to have food as the focus and discussion point, and where you shouldn’t expect to understand everything. Sounds much more fun than playing it safe though, right?
