A trio of Athens beverage legends – Vasilis Kyritsis and Nikos Bakoulis of The Clumsies, and Dimitris Dafopoulos, co-founder of Three Cents Artisanal Beverages – joined forces to open Line, an industrial-chic bar that specialises in fermentation projects (specifically, beer, fruit wines and bread). Located about 10 minutes from downtown Athens, the collaboration happens in a gorgeous warehouse-like building that used to be one of the oldest art galleries in Greece. Armed with a zero-waste philosophy and offbeat, subversive approach to drink making, the wines are the main focus of the beverage programme, buffered by a minimal but exciting cocktail list made up largely of classics like the Paloma, Negroni, Mai Tai, Old Fashioned and more, each made with housemade ferments in place of more traditional ingredients.
