A trio of Athens beverage legends – Vasilis Kyritsis and Nikos Bakoulis of The Clumsies, and Dimitris Dafopoulos, co-founder of Three Cents Artisanal Beverages – joined forces to open Line, an industrial-chic bar that specialises in fermentation projects (specifically, beer, fruit wines and bread). Ten minutes from downtown Athens, the collaboration takes place in a warehouse-like building that was once one of Greece's oldest art galleries. Armed with a zero-waste philosophy and an offbeat approach to drink making, the wines are the main focus here, buffered by a minimal but exciting cocktail list made up largely of classics each made with housemade ferments in place of more traditional ingredients.
