Budapest may be best-known for its cavernous ruin bars but this smart spot in central Pest is an entirely different kind of experience. Sourcing Hungarian products wherever possible, which they ferment, refine and age – and sporting a zero-waste policy to boot – Elysian has a laser focus on quality and seasonality. Interiors are far more chic-mid-century than ruin shabby-chic, with a floor-to-ceiling abstract art piece backdropping Scandi-silhouette pendant lights, wooden floors and blue booths. Dried flowers and grasses adorn walls while above a central moss-lined bar a tree branch hangs in abstract, structural glory. Drinks marry sweet and savoury, with the Poppy and Oak featuring poppy milk, Hungarian oak ice cream, Elysian coffee and vodka. Meanwhile, the Bloody Mary – a mainstay on the menu which otherwise changes frequently – blends vodka, fermented shiitake mushroom, fermented Hegyes Erős paprika, verjus, tomato and spices.
