Dum refers to a famous style of cooking from Awadh in northern India whereby ingredients are finished in a heavy-bottomed pan (handi) then sealed, before slow-cooking to create tender, flavoursome dishes. It’s a technique championed at Dum Pukht, a smart restaurant in the ITC Maratha hotel in Mumbai, where patrons enjoy fine-dining among suitably regal surroundings (purple velvet upholstery, fine silverware and tinkling piano music included). You can expect a royal feast befitting of maharajas, from aromatic biryanis to melt-in-the-mouth kakori kebabs and soft breads garnished with silver and gold varq, all of which nod to the opulence of a bygone era.
