Founded in New Delhi and with an outpost in New York, it’s now opened up in Mumbai, with a grand, Art Deco-inspired dining room, complete with a dancing fountain. Even that can’t really compete with what’s on the plate, with a menu that runs from burrata chaat to pulled pork tacos wrapped in phulka bread (one of the bestsellers). While concepts can sound gimmicky, the execution’s flawless, balancing fusion flavours with considerable care and panache. Based on Kashmiri-style tamatar chaman, the ‘hundred layer’ paneer is a must, taken to a whole new level by its stacked construction. Don’t skimp on the breads, which are playful and deeply delicious, whether you opt for a black-garlic naan, an applewood-smoked bacon kulcha or a decadent parmesan paratha.
