Izumi

Mumbai, India

If Mumbai’s developed a taste for Japanese flavours, that’s largely thanks to Izumi, chef Nooresha Kably’s pioneering Bandra eatery. From the start, it offered a cooler, more casual take on Asian dining, with dishes like its charismatic ramen bowls, built around slow-simmered stocks, or hamachi (yellowtail) with ponzu, chilli and wasabi jelly. There’s plenty for vegetarians, too, from smoky napa cabbage, cooked on the robata grill, to miso oat-milk ramen, with crunchy cubes of deep-fried tofu. It’s famed for its pan-fried gyoza, so order up at least one round, dipped in sansho pepper sauce or almond chilli oil. After dinner, check out Idoru, its small but buzzing upstairs bar, whose vinyl collection nods to Japan’s kissa (listening bars), and whose barstaff mix a mean margarita, edged with bonito salt.
