The biryani is the must-try dish at Dum Pukht, which specialises in the ancient art of dum cooking, where food is slow-roasted in its own juices in a dough-sealed pot called a handi. Chef Ghulam Qureshi has been at the ITC Maurya hotel since 1977 and learned this culinary art, which was popular in the royal kitchens of Awadh, Bengal and Hyderabad, from his father. The restaurant's grand decor – all deep purples and golds, glinting silverware, starched tablecloths and a piano player – echoes the old-world charm of the menus. It is a suitable stage for a banquet of kakori kebabs, lamb biryani simmered with mace and ittar, finished in a pastry sealed handi, pillowy naan and pulaos flavoured with saffron, rose water and dry fruits. It's truly a feast fit for royalty.
