The combination of the city’s most upmarket hotel with one of the world’s most refined cuisines makes for a beguilingly cosmopolitan experience at this slick Japanese import, which comes to New Delhi from New York and delivers a very Manhattan-feeling version of high-gloss glamour. Strikingly contemporary interiors in red and black feature a crystal Buddha suspended over a pool of water, bonshō bells hanging from the ceiling and private dining rooms hung with antique silk kimono fabric. The food is no less ravishing; fish is imported from Tsukiji market in Tokyo and while luxury ingredients abound (such as caviar nigiri), each of the exquisitely crafted dishes displays the Japanese hallmarks of balance and purity – and there are notably good vegetarian options too. The wine list is excellent, but the selection of 60 sakes is really the thing to drink here.
