Night Rooster by Locavore NXT is a cosy lounge reminiscent of a colonial planter’s club. It continues Locavore’s mantra of regionality and sustainability. In fact, the low-slung sofas and armchairs here are made from recycled tropical wood. Drinks have been put together by Raka Ambarawan (known locally as the ‘King of Cocktails’), who has chosen to hero seasonal and local fruits and vegetables in each one. The team also distil rice wine, ferment fruit, use homemade vermouth and bitters and infuse spirits with local flavours.
