Terracotta-coloured drapes and windows where you can see the kitchen garden through trailing creepers, a zen soundtrack and aromatic tinctures made with flowers and fresh herbs, are the setting for this playful hideaway in Ubud. Chef Will Goldfarb – formerly of El Bulli and Tetsuya's – is the mastermind behind this dessert-focused restaurant and cocktail bar. Goldfarb and the team aren't afraid to play with taste, texture and presentation across whimsical tasting menus that use Balinese ingredients and botanicals (some you'll recognise, others you won't) to create wonderfully inventive savoury snacks and a sugar plantation's worth of delicate desserts and petits fours, all paired with natural wines. Black tea and cardamom crème brûlée sits alongside the likes of Jitterbug Perfume, made with jasmine, beet, local lemon and melon. Make a trip of it and stay at the Shelter Island guesthouse, breakfast at Powder Room and take a medicinal plants workshop or pastry intensive class at the Academy, all masterminded by Goldfarb.
