Terracotta-coloured drapes and round windows where you can see the kitchen garden through trailing creepers, a zen soundtrack and aromatic tinctures made with flowers and fresh herbs are the setting for this playful hideaway in Ubud. Will Goldfarb – formerly of El Bulli and Tetsuya’s – plays with taste, texture and presentation in whimsical tasting menus that include savoury snacks and a sugar plantation’s worth of delicate desserts. Black tea and cardamom crème brûlée sits alongside the likes of ‘jitterbug perfume’ (jasmine, beet, local lemon, local melon).
