In a quest to reflect the best of Ireland's landscape, craftspeople and artists, Ross Lewis spent 29 years building an award-winning fine-dining restaurant in the capital's centre. In 2021, he passed the chef-patron baton onto the highly-acclaimed Mickael Viljanen. Situated in the Dublin Writers Museum, the restaurant's latest chapter reads as well as the last, with two Michelin stars awarded within just seven months. In a series of tastings and set menus, Chapter One shows off Ireland's diverse terroir with more than a little innovation sprinkled on top. Dishes might include glazed Donegal Lobster with a timut pepper marmalade; BBQ Wicklow Lamb Saddle; and wild strawberries with rose. The pared-back dining room, designed by Irish interior architect Maria MacVeigh, is the perfect backdrop to display the work of local artists – pieces are commissioned annually for the menu cover, while the original can be admired in the restaurant. There is also a chef's table where guests sit around a volcanic rock table in a glass box in the kitchen itself as the culinary story plays out.
