Yuval Ben Neriah is one of Israel’s most exciting chefs. After opening Taizu in 2013 to high global praise, he founded ‘A’ in 2022 as a continuation of his mission: to celebrate Israel’s diverse and delicious larder through Asian-accented cooking. The menu here spans a range of traditional Japanese dishes created using Israeli produce. Think plates of delicate tempura using shrimp caught just off Israeli shores, or bone marrow mazeman ramen, topped with caviar harvested in Kibbutz Dan in the north of the country. There are no bad choices to be made when ordering, but steaks here are worth the booking alone. Offering porterhouse, T-bone and prime rib among its delectable selection, each cut is hand-picked and bolstered by a touch of dry-ageing or koji grain. The result? Symphonious sides of beef, hard-seared and singing with nutty funk and umami. These are to be enjoyed alongside its astute range of sides, such as silken potato purée with dashi, Dijon mustard and Kewpie mayo. To match its Japanese-inspired dishes, ‘A’ also houses one of Israel’s most extensive ranges of sakes. The dining room, adorned with modernist light fixtures, also hosts expansive floor-to-ceiling windows which offer up a stunning vista of Tel Aviv’s bustling streets below.
