The hint’s in the name. To share a meal at Yaffo-Tel Aviv is to witness a harmonious culinary wedlock of old world and new under the vision of Haim Cohen – one of Israel’s most lauded chefs. Rooted in the chef’s own heritage – modern Tel Aviv via old Jaffa, JerUSlem and Ashkenazi tradition – here, the country’s cooking has absorbed influences from Cohen’s experience in French technique and European fine dining. The result is precise, complex and nostalgic in equal measure. But more importantly, it acts as a love letter to food. The dining room follows similar stride, contemporary industrial touches accent starched white tablecloths, while seemingly faded textiles grace the walls. To eat? A tabun (clay oven) sets the tone with charred breads and ubiquitous tahini, before elegant plates of beef tartare or crab gnocchi with brown butter and challah crumbs. Whole sea bass wows in tomato-butter sauce, while lamb kebabs are as good as you’ll find anywhere.
