Hiba opened in spring 2022 to universal acclaim, its seriously chic 40-cover dining room and 12-course tasting menu of Israeli-Arab fusion making an instant impact on the Tel Aviv restaurant scene. Chef Yossi Shitrit is a well-known TV chef, which no doubt adds to Hiba's appeal and to its months' long waiting list. The tasting menu is a playful exploration of Middle Eastern cuisine made using the best Israeli produce to create dishes like brioche stuffed with crystal shrimp and draped in lamb lardo or smoked sweetbreads with leeks and fermented garlic plus a dessert of dates and bulgar wheat elevated by a little kick of fennel. The restaurant also hosts regular dinners with winemakers and guest chefs who add another level of excitement to its already dynamic and disruptive space in the industry.
