A slick makeover, complete with mid-century furniture in neutral tones and statement house plants, may have left this dining room looking contemporary, but the hospitality is every inch as traditional as when the restaurant opened in 1962, and has held Michelin stars since 1990. You can go a la carte, though the tasting menus are special. Signature dishes such as semolina durum wheat served simply with spring onions and a touch of red chilli sit alongside the more daring 'territories' menus, which change regularly – one is created by Fabio and the other by Alessandro. You could be eating Carmagnola rabbit stuffed with capers; zucchini and mushroom risotto; pigeon cooked in a lavec; or a simple plate of sun-ripened tomatoes with basil and lemons, all immaculately presented.
