In his minimal restaurant, Yoji Tokuyoshi – who worked at Massimo Bottura's lauded Osteria Francescana for almost a decade – combines Japanese techniques and aesthetics with traditional Italian flavours to create an avant-garde synthesis of both. Pizza capricciosa is reimagined as a feather-light rice cracker topped with mortadella, anchovies and fried artichokes, and trout with vinegar arrives delicately perched on a parsnip crisp cut into the shape of a fish tail. The wine pairing for the omakase tasting menu includes unusual sakes such as Shirayuki Edo Genshu, a reproduction of an ancient recipe dating back to the 17th century.
