Sushi Gyoten

Sushi was always part of Kenji Gyoten’s life, the chef-owner of the eponymous sushi bar having grown up with a sushi-chef grandfather. Beginning his training with the city’s master chefs at the age of 21, Gyoten opened his namesake restaurant in 2009 in his hometown, Shimonoseki in Yamaguchi, before relocating to Fukuoka in 2012. Gliding behind the counter in the restaurant’s clean-cut dining room, he sends out akazu-seasoned sushi rice – cooked so that it retains some grain on the palate – topped with bright, expertly prepared fish plucked from the sea that morning. Gyoten’s philosophy is that people and ingredients represent once-in-a-lifetime encounters, so he sources each ingredient diligently and strives to imbue fish with a deeper flavour than his guests will have tasted before.
