Cameras are forbidden behind the contemporary glass doors of Hajime, tucked away in a quiet side street in Osaka’s Nishi district. Design engineer turned chef Hajime Yoneda focuses on the meaning of life through food. His signature dish, ‘Planet Earth’, features 110 different vegetables, grains and herbs meticulously arranged around shellfish foam to represent land and sea. The tasting menu is prepared a day in advance of diners’ arriving, so any dietary requirements must be flagged well in advance. For those looking to save a little yen, there is a shorter taster (which doesn’t feature ‘Planet Earth’) available for a "slightly" cheaper $310.
