Just 18 months after opening in 2008, Hakime was awarded not one or two but three Michelin stars, retaining them to this day. The restaurant's modest entrance is tucked away on a side street, where, inside, design engineer-turned-chef Hajime Yoneda focuses on the meaning of life through food. His signature dish, 'Planet Earth', features no less than 110 different vegetables, grains and herbs, painstakingly arranged to represent the cycle of nature. Around 400 ingredients are used in the tasting menu (which takes three-and-a-half hours to get through). For those looking to save a little yen, there is a shorter taster (which doesn't feature 'Planet Earth') available for slightly less. Cameras are forbidden, so you'll have to dig deep into your pockets if you want to see for yourself what the food is like.
