Gen Yamamoto has only one bartender (Yamamoto-san), eight seats and three menu options. This is the cocktail version of a tasting menu: you choose if you're going to stay for four, six or seven drinks, with each course a super-seasonal creation, which is served in a unique piece of glassware alongside a specially selected flower. Prepare to rethink everything you think you know about bars.
