Having cut his teeth in renowned Japanese restaurants including Kyoto’s Maruta, chef Hidetoshi Nakamura returned to his native Tokyo to open his debut restaurant, Myoujyaku, in 2022. Set on a quiet residential street in Nishiazabu, off Roppongi Street, the Tetsu Kikima-designed interior comprises a main dining room with eight-seater counter and three private rooms and offers a serene backdrop to the French-leaning cuisine. Nakamura challenges himself to distil the essence of an ingredient, placing an emphasis on evoking memories associated with water. The opening dish of his tasting menu sees vegetables boiled in water from three different sources, a pinch of salt being the only addition, while his buckwheat soba noodles are made using mother water from a brewery in Kanazawa. Sommelier Yuka Nakano is behind the excellent drinks pairings from a menu that contains more than 30 varieties of sake, plus an array of teas, including cold brew sencha and Kaga.
