To eat here, first you need to find one of the restaurant's 6,000 members for an introduction (best befriend a local). The rewards are huge. Sushi nuts rave about Fujinaga's fatty tuna, prepared under a microscope with each sinew removed with tweezers and scored 50 times for a taste experience like no other. Don't expect to pick and choose your dishes, however. Fujinaga serves a set menu that varies in composition and price with the seasons. Diners tip whelk liver sautéed with butter and soy sauce, broiled blue eel and gizzard shad nigiri as dishes to look out for.
