Ryuzu

Tokyo, Japan

Despite the Japanese-sounding name, Ryuzu is a French restaurant run by chef Ryuta Iizuka, who worked at Joël Robuchon’s establishments before opening his own in 2011. A ten-course tasting takes in shiitake tart, grilled calamari and beef fillet, while a longer degustation showcases the best of the season’s ingredients. There is also an à la carte for counter diners, with fish of the day, sautéed foie gras and roasted lamb. The setting is sleek and formal, with beautiful tableware including colourful, bespoke Arita-yaki platters.
