A temple to sushi; albeit a very small one. Sawada seats just six diners around a counter where husband-and-wife team the Sawadas prepare some of the best sushi in Tokyo. Sawada is famed for its hon maguro (blue-fin tuna), uni (sea urchin) and aburi maguro (seared tuna salad). The rice is seasoned with komesu (rice vinegar) and salt, making it a perfect pairing with sake. Such delicacies demand reverence. No photos are allowed inside, and diners are expected to arrive on time. Calm quiet is the order of the day inside. This is a temple, after all.
