Tokyo, Japan

Perched on the 10th floor of Tokyo’s iconic Shiseido building, Faro showcases the exceptional culinary skills of chef Kotaro Noda, who brings 20 years of experience cooking in Italy to the table. In an elegant but unstuffy dining room characterised by a soothing palette of greys, whites and blues, Noda’s lunch and dinner set menus combine the precision of Japanese kaiseki multi-course dining with the kind of feel-good Italian cuisine that nonna used to make. A standout potato spaghetti (jagaimo), for instance, sees an Italian fish sauce top pasta made using a cultured, Japanese-made butter, ramping up the indulgence factor . Desserts don’t disappoint either, coming courtesy of Italian-trained pastry chef Mineko Kato. Vegetarians and vegans are well catered for, with the chef’s appreciation of stellar produce, combined with his understanding of umami and fermentation, guaranteeing that each plate is bursting with freshness and flavour.Perched on the 10th floor of Tokyo’s iconic Shiseido building, Faro showcase
