With its high ceiling, lack of decorations and sandy colour palate, this crescent-moon shaped restaurant is a study in restraint. Shingo Takahashi draws inspiration from the seasons and ancient sushi traditions to create classic nigiri. Complex appetiser dishes may include mackerel smoked until earthy over straw and vinegar-marinated horse mackerel stuffed with pickled ginger and cucumber, served with a single drop of soy sauce. Takahashi once worked in Hirakou Brewery in Tokyo’s Miyagi Prefecture and has a deep understanding of sake pairings.
