Head chef Zaiyu Hasegawa has a reputation for dishing out welcome hugs before serving delicacies such as mushroom-stuffed ‘Dentucky Fried Chicken’ (served in a fast-food takeaway box bearing Hasegawa's face), foie gras wafer sandwiches and salads of deep fried, pickled, grilled and raw veg, topped with the odd edible ant and grinning emoji carrot slice. Hasegawa says his reinvention of kaiseki – elegant meals comprising many small, artistic dishes using seasonal produce – is designed to put fun back into the Japanese culinary tradition. You’ll leave grinning like a carrot. Enjoy an eclectic assortment of Italian wines and Japanese sake with the alcoholic pairing.
