Amman is a city of many sides. Behind the pass, chef Ali Ghzawi, the winner of Top Chef Arabia in 2019, has created a selection of dishes that tells a story from his past or reimagines a formative culinary memory. Alee’s batata harrafor example, is a Jordanian classic that elevates the humble potato with garlic, coriander, lemon and shatta, a fermented local red chilli paste. Something else fit for fine dining from the humblest of starting points: local cheese curds, fried and skewered, finished with a honeybuns mint emulsion, inspired by Ghzawi's childhood tinned cheese sandwich. Take a seat by the window, order a few plates and soak up the history of the city and the aromas of the kitchen.
