With just 10 seats, no set menu and few staff – often just founder Shawn Chong behind the bar – Mizukami is modelled after the kind of intimate virtuoso cocktail hang outs that have become so popular in Japan. A small horseshoe-shaped bar with slatted wood and subtle illumination is the sole focus in an otherwise unadorned box room; there’s no question about where your attention should be. When Chong isn’t headlining a big bar event in the likes of Bali or Penang, you’ll find him here shaking up his version of a jungle bird, a sake-infused martini or a Fuji apple and plum concoction with whisky. The exact serves shift with the season, day, customer and the bartender’s whims, ensuring that no two visits are ever exactly alike.
