A majestic 200-year-old oak tree serves as the centrepiece of Animalón, the second restaurant located on the same property as chef Javier Palsencia’s open-grill Finca Altonzano in the Valle de Guadalupe. Surrounded by open countryside, the romantic setting is fitting for chef Oscar Torres’ seasonal farm-to-table tasting menus, which tend to skew seafood- and veggie-centric thanks to the abundance of both that can be found in the Baja region. It wouldn’t be a proper wine country dining experience without expert wine pairings, and thankfully Animalón offers an award-winning wine list that draws extensively from the area, with a range of styles and vintages available (including dessert wines and magnums). For non-wine drinkers, a new on-site bar stocks a thorough selection of craft beers and cocktails made with Mexican spirits.
