Counting surrounding orchards, ranches and fishermen among his suppliers, Monterrey-born chef Alfredo Villanueva’s focus is on creating simple, beautiful and delicious plates, which are notable for their lack of pretension. Starter options include pickled mussels, grilled oysters, and a roasted carrot with duck jus and brown butter, while mains include crunchy pork in green sauce, ayocaotes, zucchini and corn and the signature Carne Asada – an 800g ribeye steak served with grilled vegetables and quesadillas.
