Koli “cocina de origen” is a gastronomic marvel. With a name that means “grandfather” in Nahuatl, the fine dining restaurant is the Rivero brothers’ exploration of the origins of cuisine in Northern Mexico. There, the siblings, who work as the restaurant’s sommelier, chef, and pastry chef, reimagine classic dishes that embody the sensibilities of Nuevo León in a new, state-of-the-art way. Take, for example, dishes like the Meteorite, where charred meatballs served on top of smoking bones represent the asteroid that hit the Yucatán, causing mass extinction. It's no wonder, then, the elegant concept has won multiple awards, including a spot on the list of Latin America’s 50 Best Restaurants in 2022. The Rivero brothers have also taken adventurous drinkers into consideration and, in addition to wine pairings, guests can also choose from a cocktail pairing or alcohol-free cocktail pairing to accompany tasting menus, which are offered at three different price tiers.
