Ciel Blue is set on the 23rd floor of Amsterdam’s Hotel Okura, where panoramic skyline views distract from the 70-cover dining room’s plush neutral palette. In the ‘Experience’, ‘Guestronomy’ and ‘Caviar’ tasting menus, chefs Onno Kokmeijer and Arjan Speelman present diners with a succession of precise, whimsical plates showcasing the likes of oysters from Brittany, North Sea sole with salsify, lovage and ras el hanout, and Japanese wagyu. Go ‘all-in’ and the price also includes an aperitif, wine pairing, coffee or tea and a signed copy of Ciel Bleu’s book ‘Guestronomy’.
