In the ‘Experience’, ‘Guestronomy’ and ‘Caviar’ tasting menus, chefs Onno Kokmeijer and Arjan Speelman present diners with a succession of precise, whimsical plates showcasing the likes of oysters from Brittany, North Sea sole with salsify, lovage and ras el hanout, and Japanese wagyu.
