Exuding warmth and with a tendency towards French cuisine, Troef is the neighbourhood bistro everyone wishes they had. Raymond Plat, who previously cheffed at such establishments including 21 and De Librije, oversees the open kitchen, sending out an a la carte menu that’s pleasingly concise – three or four choices for each section, often with one main ingredient lionised. Smoked Dutch eel is served with crispy potato and horseradish; North Sea lobster fills a vol-au-vent alongside local shrimp and lemon balm; and pork cheek croquettes come with oyster cream. The vegetarian options are in no way an afterthought, with dishes such as butternut squash and kale tartlets with a pumpkin seed praline, or a creative take on the Caesar salad with local Gouda-style cheese and croutons on red chicory, served over crushed ice. The wine list, on the other hand, is pages long, with a wine closet that’s home to 3,000 bottles, where you can walk in and pick a pour.
