Maido is where the Peruvian and Japanese cultural heritages of Mitsuharu ‘Micha’ Tsumura collide on the plate. Entering the smart dining room, with thick ropes artfully hung from the entire ceiling, the assault on the senses begins immediately as the waiting team shout ‘maido’ (‘welcome’ in Japanese) in unison at each newly arrived set of guests. Seafood plays a leading role in the tasting menu, with Peru’s national dish of ceviche cured in a spicy citrus marinade served with cream of sarandaja bean and mackerel. Other highlights include the beef short rib, cooked for 50 hours and so tender only a spoon is needed to carve it at the table. Splurge on the tokushou pairing for a taste of luxe wines, sakes, and spirits or keep things light with the non-alcoholic pairing for bright juices designed to complement each course.
