Entering the smart dining room, with thick ropes artfully hung from the entire ceiling, the assault on the senses begins immediately as the waiting team shout ‘maido’ (‘welcome’ in Japanese) in unison at each newly arrived set of guests. Order from the sushi bar, pick and mix from the à la carte or splurge on the ‘Nikkei Experience’ tasting menu. Seafood plays a leading role, with Peru’s national dish of ceviche not to be missed. Other highlights include the beef short rib that is cooked for 50 hours and so tender only a spoon is needed to carve it at the table.
