Part butcher’s shop, part restaurant, Osso might be in an untrendy district but it is the destination for meat in Lima. Trained in butchery in the US and France, Renzo Garibaldi dry-ages beef and prepares charcuterie in house, cooking almost everything – from whopping rib-eye steaks to banging sausages – on the grill. You can go à la carte or go for the tasting menu, but most of the food here is meant to be eaten with your hands. Wash it all down with a refreshing chilcano de pisco cocktail.
