Hundreds of bottles of rum from around the world line the back bar at The Parrot Shadow in Lima's San Isidrio neighborhood, where the vibe nods to mid-century California, as well as to tiki bars around the world that beverage director Nando Córdova has visited. On the menu, tiki classics such as the Mai Tai and Jungle Bird share space with rum-based drinks from other parts of the globe, like the Mojito, Caipirinha and Planter's Punch. Several additional sections of the menu showcase Córdova's original creations from over the years, from rum-based twists on classics to celebrations of pisco and clarified cocktails, detailing his love for all things tropical. To soak up the boozy drinks, a food menu features cuisine that one might find on a menu in Polynesian restaurants in California in the 1950s. Original and memorable.
