Cura, the fine dining restaurant of the Four Seasons Ritz Lisbon has a menu rooted in the Portuguese terroir. An abbreviation of curadoria, meaning skilful curatorship in English, Cura showcases chef Rodolfo Lavrador's careful curation of Portuguese ingredients and culinary traditions, showcase his vision of modern fine dining in Portugal. Galician ox is garnished with endives, fig and finger lime, oysters are topped with cherry, horseradish and cinnamon, while Azores amberjack is served alongside cockles in a wasabi-spiked jus with slivers of refreshing cucumber. For dessert, expect pineapple (again from the Azores) with chamomile-infused cream and Barraida sparkling wine syrup. The wine list stays in Portugal with its native grape varieties and bottles from a mix of low intervention and biodynamic producers.
