No corners had been cut in taking the smokehouse to Asia. This modern barbecue joint in Chinatown cooks dishes in a custom-made brick oven that heats up to more than 1,700 degrees. Chef Dave Pynt counts his time under Victor Arguinzoniz of Asador Etxebarri in Spain, cooking with wood grill and ovens, as his most formative. And the influence is plain to see with plates ranging from the hearty pork sangar (a pulled-pork sandwich that has been a hit since day one) to the more delicate smoked quail egg topped with caviar. The industrial-chic interior, with its high ceilings and exposed beams, underscores Burnt Ends' knack for recreating the feel of an Australian barbecue house in the heart of Singapore. Bookings fill up quickly, but walk-in tables are available at the start of every service.
