One of the hardest tables to book in Singapore and a top-ten entry in Asia’s 50 Best. This modern barbecue joint in Chinatown cooks dishes in a custom-made brick oven that heats up to more than 1,700 degrees. Chef Dave Pynt counts his time under Victor Arguinzoniz of Asador Etxebarri in Spain, cooking with wood grill and ovens, as his most formative. And the influence is plain to see with plates ranging from the hearty pork sangar (a pulled-pork sandwich that has been a hit since day one) to the more delicate smoked quail egg topped with caviar. Walk-in tables are available early in service.
